This is an easy yet delicious Korean side dish that everyone can make at home!
Ingredients
1 cucumber, diced/sliced
1 tablespoons salt
1 spring onion, chopped
1 1/2 tablespoons soy sauce
2 teaspoons vinegar
2 teaspoons sugar
1 tablespoon red pepper flakes (gochugaru)
1 clove of garlic, minced (add more if you love garlic!)
2 teaspoons sesame seeds
Directions
STEP 1
Cut your cucumber into desired shapes. We recommend cutting thicker in size for extra crunch!
STEP 2
Add the salt to the diced/sliced cucumbers and mix well, let it sit for at least 15 minutes.
After 15 minutes, wash the cucumber thoroughly, pat them dry and transfer them into a big bowl.
STEP 3
Add sugar, vinegar, soy sauce, sesame seeds, sesame oil, crushed garlic, and korean red chilli pepper flakes (gochugaru) into a small bowl and mix well.
Add the mixture to the cucumber and make sure every slice is covered with the sauce!
STEP 4
It is now ready to eat but we recommend keeping the cucumber in the fridge for at least 30 minutes before serving for more flavour!
Serve it as a side dish with rice or noodles! Have fun!
