Strawberry Mochi (Daifuku)

To celebrate Valentine’s day, we have decided to release a recipe for strawberry mochi! Ichigo daifuku (strawberry mochi) is popular street food from Japan. Combine this with soft yet chewy mochi; we can guarantee you that preparing this for your loved ones would be 10x better than chocolate-covered strawberries (no offence to chocolate covered strawberries). We have also released this a few days before so you can prepare ahead! Without further ado, let’s roll some mochi!




 

Ingredients


Mochi:

130 grams Glutinous Rice Flour

165 grams Water/Milk

25 grams Sugar

Cornflour for dusting


Filling:

145 grams Red Bean Paste

6 Strawberries

Step 1: Let’s Get Started


Directions


STEP 1

Cook the red bean paste in a non-stick pot for 5-10 minutes until the colour changes from dark red to light red. Make sure to stir constantly to prevent burning the red bean paste. Once this is done, set it aside to cool.



STEP 2

Give the strawberries a good wash and cut the stalk off.


Note:

You are free to use any fruits from mango, kiwi, mandarin but we recommend not putting these with red bean paste!



STEP 3

In a microwavable bowl, mix glutinous rice flour, sugar and water, cover with cling film. Cook in the microwave for 2 minutes, take the mixture out and mix thoroughly. Cook it again for 1:30 minutes.



STEP 4

Sprinkle cornflour onto a work surface (make sure to use enough as mochi dough can be very sticky). Transfer the cooked mochi to the worktop and knead, be really careful not to burn yourself.


Note: You can also beat the mochi with a rolling pin, this will give it a more chewy texture!



STEP 5

Shape the red bean paste into balls, each weighing around 20-25 grams.


STEP 6

Flatten the red bean paste ball and put the strawberry in the middle and spread the bean paste around the strawberry. (Refer to the picture on the right)


STEP 7

Cut the mochi dough into 6 pieces and flatten.


STEP 8

Place the bean paste strawberry into the middle of the mochi and wrap it up.


STEP 9

Cut the excess mochi off the end and pinch the end to seal and you are done!


STEP 10

Send this to your crush or lover to impress them!


Feel free to wrap anything including ice cream with the mochi! Be creative and have fun! See yous next time!
